Avocado & Coconut Popsicles
A thirst-quenching tasty treat and skin super-food all wrapped up in one easy-to make frozen popsicle!
Make in advance and keep handy in the freezer for when you fancy a cool, refreshing summer treat without all the sugar and empty calories. When temperatures start to soar, coconut water helps to keep you well hydrated too…
Makes 6-8 popsicles
You will need:
• 1 large ripe avocado
• 200ml coconut cream
• Juice of 1 lime
• 3 tablespoons coconut water
• 1 tablespoon rice malt syrup
• 1 teaspoon chia seeds
• ¼ teaspoon salt
Method:
Blend all of the ingredients in a food processor or use a stick blender. Beat to a creamy liquid. Spoon the mixture into ice-cream moulds, insert the sticks and freeze for at least 4 hours.
